Forget the Stove: Raid Your Garden Instead

 

Summer gardens are loaded with tomatoes and cucumbers. It’s Gazpacho time! We love this cold summer soup, bursting with freshness and the taste of sunshine. Use the Messer Family recipe or try one with a twist, from my dear friend Laura Mogil’s blog, the Inspired Chef

Messer Family Recipe:
1/2 cucumber
3-4 medium tomatoes, chopped
1/3 cup scallions (4-5, use most of the green stem)
1/2-1 chopped green pepper
2+ cups of Sacramento tomato juice (my favorite brand but use any you like)
1/4 cup olive oil
1/4 cup red wine vinegar
1 tsp salt
1/4 tsp pepper
Mix all together, best made 1 day in advance. Garnish with herbs, avocado or croutons.
